Pumpkin Bars
Ingredients:
2 C Flour
1/2 tsp Ground Cloves
1 tsp Baking Soda
1/2 tsp Ground Nutmeg
2 tsp Baking Powder
4 Eggs
1/2 tsp Salt
1 C. Vegetable Oil
2 tsp Cinnamon
2 C. Sugar
1/2 tsp Powder Ginger
1 small can Pumpkin (16 oz.? or 2/3 large)
Frosting:
8 oz Cream Cheese 1 Tbl Milk
1/2 C Butter, softened 4 C Powdered Sugar
1 tsp Vanilla Extract
Directions:
Preheat oven to 350 degrees F. Mix flour, baking soda, baking powder, salt, cinnamon, ginger, cloves, and nutmeg. Set aside.
Beat eggs, oil, sugar, and pumpkin. Gradually add dry ingredients.
Pour batter into an ungreased jellly roll pan. Bake at 350 degrees F for 15-20 min (toothpick comes out clean).
These are baking in the oven today. If you have a big can of pumpkin you can substitue that instead of a small can and add 1/2 c oil for lighter and still delishous cake.

mmmm... I bet your house smells really good right now! I'm a weirdo, though, I don't like the taste of pumpkin, but maybe I should bake some for Kevin and the girls so my house can smell like fall! Win, win, right?
Yummy! POint out that you don't add 1/2 c oil on top of the 1 cup for the lighter recipe, though. You just use 1/2 C oil instead of 1 C, and add a large can of pumpkin. It works great! Maybe it's a good thing I don't have an oven right now, because I think I'd be baking up a storm and that would totally undo everything I've done in trimming off a little of this excess fat.
